Ras el Hanout

Ras el Hanout is a blending tradition in North African, and particularly Moroccan, with numerous recipes varying depending on the spice merchant, region, and intended use. Its name literally translates to "head of the shop" or "top of the shop," referring to the exquisite blend carefully crafted by the spice merchant. Mama Ram Ras el Hanout doesn't claim to be the sole, unchanging recipe of this tradition; it offers its own interpretation, balancing warm, earthy, and floral spices.

Cumin and coriander form the dry, earthy body of the mixture. Turmeric adds a yellow-golden color and a slightly bitter depth to this body.

Cinnamon opens up a warm, rounded layer, while ginger and black pepper provide a more vibrant, dry, and direct sharpness. Cardamom leaves a refreshing, slightly resinous and floral aroma over the intense spices.

The saffron and rose petal blend adds a delicate floral note without becoming overly perfumed. It is particularly noticeable in slow-cooked dishes and rice recipes, subtly blending with other spices.

From a bitter mixture, you should expect a warm, aromatic, earthy, and slightly floral profile. Since there is no salt in the mixture, the salt in the dish will need to be adjusted separately.

Ras el Hanout first reveals a warm, earthy body of cumin, coriander, and turmeric. Then cinnamon, ginger, and black pepper become prominent; the finish leaves a refreshing, subtly floral trail of cardamom, saffron, and rose petals.

• Tajine and Stews: These slow-cooked dishes, prepared with lamb, chicken, beef, or vegetables, acquire a warm, layered body of spices.
• Couscous and Grain Recipes: Couscous, bulgur, rice, and quinoa can be used with vegetables, nuts, or dried fruits.
• Meat and Poultry Marinades: Can be mixed with olive oil, yogurt, or lemon juice and used on lamb, beef, and chicken.
• Roasted Vegetables: Compatible with carrots, cauliflower, potatoes, pumpkin, eggplant, and sweet potatoes.
• Legumes: Chickpeas, lentils, dried beans, and black-eyed peas add a warm, earthy depth to recipes.
• Rice dishes: In plain or fruit-based rice dishes, cinnamon, cardamom, and saffron enhance their aromas.
• Soups: It can be used in small amounts in lentil, carrot, tomato, and pumpkin soups.
• Meatballs and Fillings: It can be used in meatballs made with minced meat, or in rice or bulgur-based stuffing for stuffed vegetables.
• Yogurt-Based Sauces: A small amount can be added to strained yogurt or labneh and served alongside vegetables and grilled meats.

For four servings of tajine, stew, or legume dish, start with 2 teaspoons . If a more pronounced spice profile is desired, you can increase the amount to 1 tablespoon, tasting as needed.

For meat, chicken, or roasted vegetables, use 2–3 teaspoons per 500g of ingredients ; for couscous, rice, and other grain recipes, use 1–2 teaspoons per 300g of dry ingredients .

For stews, add the spices to softened onions or oil and sauté over low heat for 20–30 seconds ; then add the liquid or other ingredients. To prevent the turmeric from becoming bitter and the delicate aromas of rose petals and saffron from being lost, do not sauté over high heat for too long.

Since there is no salt in the mixture, adjust the salt separately.
