Przyprawa Myśliwska spice blend is an herbaceous, resinous, and warm spice mix inspired by Poland's hunting and meat cuisine traditions, combining marjoram, black pepper, onion, and garlic with juniper, cumin, allspice, and bay leaves.
The dried herb character of marjoram and bay leaf is deepened by the resinous aroma of juniper, reminiscent of pine and forest berries. Black pepper, cumin, and allspice add warmth, while onion and garlic create a rich flavor base. It can be used with game meats, beef, lamb, pork, and duck; in meatballs and sausage mixtures; and in stews, thick sauces, mushrooms, potatoes, and cabbage.

Przyprawa Myśliwska is a richly aromatic spice blend inspired by Polish game dishes, roasted meats, sausages, pâtés, slow-cooked stews, and rich sauces. Its name means "hunter's spice," but its use is not limited to game meat.
In Polish cuisine, the name “myśliwska” evokes hunting and forest traditions. There isn't a single, unchanging recipe for all the spice blends prepared under this name. Mama Ram's interpretation combines aromas commonly found in Polish meat, cabbage, and slow-cooked dishes, such as marjoram, black pepper, garlic, juniper, allspice, and bay leaf.
Marjoram forms the main herbaceous character of the mixture. Its slightly sweet, dry and warm aroma pairs particularly well with fatty meats, sausage mixtures, legumes and cabbage dishes.
Juniper berries impart a sharp aroma to the blend, reminiscent of pine needles, resin, and dark forest berries. Besides forming a classic pairing with the distinctive flavor of game meats, it also adds a dark, forest-inspired depth to beef, lamb, duck, pork, mushroom, and cabbage dishes.
Black pepper provides a direct and warm sharpness, while cumin strengthens the body with its earthy, slightly bitter, and warm character. Allspice offers sweet spice notes reminiscent of cloves, cinnamon, and nutmeg; and bay leaf creates a dry, herbaceous, and slightly woody background.
Onions and garlic establish the aromatic base of the mixture. The browned surface of the meat, combined with the cooking juices and thick sauces, allows the other spices to be perceived more fully.
Expect an herbaceous, peppery, resinous, garlicky, warm, and slightly sweet spicy profile. It's not pungent because it doesn't contain chili peppers; however, juniper, allspice, and bay leaves have distinct aromas, so it should be used in moderation.
The mixture does not contain salt. Therefore, you need to salt the meat or dish separately; do not try to compensate for the lack of salt by increasing the amount of spices.

Przyprawa Myśliwska initially reveals the warm, appetizing character of marjoram, onion, and garlic. Then, the earthy sharpness of black pepper and cumin becomes apparent. Juniper, allspice, and bay leaf leave a long, resinous, sweet, spicy, and forest-like trail at the finish.
Game Meats: Deer, roe deer, wild boar, rabbit, and similar game meats can be used in marinades, stews, casseroles, and baked recipes.
Beef and Lamb: It adds a grassy and dark depth to roasts, ribs, shanks, stews, goulash, and slow-cooked meats.
Pork: Pork shoulder, chops, ribs, roast, and sausage mixtures feature a juniper and garlic profile.
Duck, Goose, and Chicken: Particularly compatible with the fatty character of duck and goose; it can also be used in chicken leg and whole chicken recipes.
Meatball, Sausage, and Pate Mixes: Gives ground meat, sausage, terrine, and pate mixes a warm, herbaceous, and slightly resinous character.
Stews and Casseroles: Can be used in long-cooking dishes prepared with meat, mushrooms, root vegetables, and thick cooking liquids.
Bigos and Cabbage Dishes: Sweet or sour cabbage adds an aromatic depth to dishes with meat, mushrooms, and prunes, reminiscent of Polish cuisine.
Mushrooms: Cultivated mushrooms, oyster mushrooms, and wild mushrooms can be used in stir-fries, soups, sauces, and stews.
Potatoes and Root Vegetables: Compatible with potatoes, carrots, celery, beets, turnips, and pumpkin.
Thick Sauces and Soups: Can be added in controlled amounts to sauces and thick soups that use broth, mushrooms, red wine, or cream.
For 500 g of game, veal, lamb, pork, or duck, start with 1–1.5 teaspoons of Przyprawa Myśliwska. Season the meat with salt as well, spreading the spice evenly over all surfaces.
For a wine marinade, use 1 1/2 teaspoons of spices, 2 tablespoons of oil, and 2–3 tablespoons of red wine for 500g of meat . Optionally, you can also add 1 teaspoon of vinegar or a few crushed berries. Let the meat rest in a covered container in the refrigerator for 4–12 hours .
For chicken , 1 teaspoon of spices and 1-2 tablespoons of oil are sufficient for 500g of meat . Marinate in the refrigerator for 1-4 hours . For duck and goose, you can increase the amount to 1 1/2 teaspoons and balance it with sweet and sour ingredients such as orange, apple, or prunes.
For 1 kg of meatball, sausage, or pâté mixture, use 2–3 teaspoons of Przyprawa Myśliwska. After salting the mixture, check the spice balance by cooking a small portion in a pan.
For four servings of stew, goulash, or casserole, start with 1–2 teaspoons . Add the spice after the onions and meat are lightly browned; stir for a few seconds and add the cooking liquid. Be careful not to add too much spice afterward, as the juniper and bay leaves will release during the long cooking process.
For four servings of bigos or cabbage stew, use 1–1.5 teaspoons . The mixture pairs particularly well with sauerkraut, sweet cabbage, mushrooms, prunes, apples, pork, and smoked meats.
For 500g of mushrooms, potatoes, or root vegetables, mix 1 teaspoon of Przyprawa Myśliwska with 1–2 tablespoons of oil. Spread evenly over the surfaces before frying or baking.
For one liter of soup or thick sauce , ½–1 teaspoon is sufficient. Start with a small amount and check the taste just before serving, as the juniper, allspice, and bay leaves will become more prominent as they simmer.
Since Przyprawa Myśliwska does not contain salt, adjust the saltiness of the dish separately. Juniper and bay leaves, if used excessively, can create a resinous and bitter taste; add the mixture in measured amounts. Do not roast the ground spices for too long in an empty, very hot pan. Do not use marinades that have come into contact with raw meat or poultry as a sauce without cooking them first.
