Lemon Chile

Lemon Chile is a vibrant and contrasting spice blend that simultaneously delivers bitterness, sourness, saltiness, and a hint of sweetness.

Isot (a type of chili pepper) provides a mild warmth with dark, fruity, and slightly smoky notes rather than a burning spiciness. Sumac adds a fruity and slightly tart acidity to this body. Citric acid, on the other hand, takes the natural acidity of sumac to a brighter and more direct level.

Brown sugar doesn't sweeten the mixture; it softens the transition between bitterness and sourness, creating a slightly caramel-like background. Sea salt, on the other hand, allows all these contrasting flavors to be perceived more distinctly.

Since the mixture contains no lemon zest or lemon flavoring, expect a clean, citrusy tartness rather than a pronounced lemon scent.

Lemon Chile initially displays a vibrant acidity; this is followed by the dark and mild warmth of isot (a type of chili pepper). The finish leaves a slightly sweet, salty, and long-lasting sour-bitter aftertaste.

• Chicken and Meat Recipes: It adds a sour and spicy flavor to wings, chicken legs, meatballs, lamb, and beef.
• Baked Vegetables: Can be used with potatoes, cauliflower, carrots, pumpkin, and corn.
• Egg and Bread Topping Recipes: It can be sprinkled on hard-boiled eggs, omelets, avocado bread, and cheese toast.
• Appetizers and Dips: Small amounts can be added to hummus, labneh, strained yogurt, and tahini sauces.
• Salad and Grain Bowls: They add vibrancy to green salads, chickpea bowls, bulgur, and couscous.
• Nuts and Snacks: Can be used with nuts, popcorn, and roasted chickpeas.

For 500g of meat, chicken, or vegetables, use 2–3 teaspoons of Lemon Chile mixed with 1–2 tablespoons of olive oil. For yogurt-based sauces and appetizers, start with 1/2–1 teaspoon per 200g .

Because the mixture contains sea salt and citric acid, taste the dish before adding any additional salt or acid. Since brown sugar caramelizes and burns quickly at high heat, add it to the mixture in the final stages of grilling or pan-frying. Use it in the last few minutes with nuts as well.
