Jerk Seasoning

Jerk refers not just to a spice blend, but also to a Jamaican cooking style where food is heavily seasoned and then grilled, charcoal-grilled, or cooked over a wood fire. In traditional interpretations, allspice, chili peppers, and thyme are key ingredients; recipes can vary from household to household and producer to producer. Mama Ram Jerk Seasoning is a dry interpretation that builds its flavor profile around allspice, chili peppers, red pepper flakes, and thyme.

Allspice is at the heart of the blend. With its multi-layered aroma reminiscent of cinnamon, cloves, and nutmeg on its own, it binds together both warm spices and peppers.

Chili peppers, paprika, and chili flakes each provide a vibrant level of spiciness in different layers. Black pepper complements this spiciness with a drier, more direct heat.

Thyme adds a dry and slightly pungent herbaceous flavor to the mixture. Onions and garlic, on the other hand, create a strong, appetizing base that becomes particularly noticeable when cooking meats and vegetables.

Cumin provides earthy depth; cinnamon and nutmeg give a warm, slightly sweet background. Brown sugar rounds off the bitterness and saltiness rather than creating a real sweetness, and helps the surface brown faster when grilling or baking.

Expect a bitter, warm, herbaceous, slightly sweet, and intensely aromatic profile. The blend contains sea salt and brown sugar ; additional salt and sugar used in the recipe should be adjusted accordingly.

The mixture itself is not smoky. The smoky and charcoal-like character associated with Jerk is created during grilling, cooking over charcoal or wood fire.

Jerk Seasoning first reveals the vibrant character of onions, garlic, and peppers. Then, the warm, layered body of allspice and the herbaceousness of thyme become prominent; the finish leaves a warm, slightly sweet trail from cumin, cinnamon, nutmeg, and brown sugar.

• Jerk Chicken: Wings, thighs, drumsticks, breasts, or a whole chicken can be marinated with oil and citrus juice.
• Pork and Red Meat: Can be used in chops, ribs, tenderloin, meatballs, and burger mixtures.
• Fish and Seafood: Suitable for shorter marination times for salmon, sea bass, shrimp, and squid.

For 500g of chicken, beef, or tofu, start with 2 teaspoons . For a more pronounced Jerk character, you can increase the amount to 1 tablespoon .

For a quick marinade, add 2–3 teaspoons of Jerk Seasoning, 1 tablespoon of oil, and 1 tablespoon of lemon or lime juice to 500g of ingredients. You can marinate chicken and red meat in the refrigerator for 2–8 hours , and tofu and vegetables for 30–60 minutes .

For fish and shrimp , 1–2 teaspoons per 500g is sufficient. Marinating seafood with citrus juice for no longer than 15–30 minutes prevents tissue degradation.

Because the mixture contains brown sugar, it can easily thicken over very high heat. Use medium-high heat on a grill or in a pan; continue cooking at a more controlled temperature once the outer surface has browned. The resulting charred character suits Jerk, but don't let the sugar burn and become bitter.

Do not use marinades that have come into contact with raw meat or seafood directly as a serving sauce. Prepare the marinade in the refrigerator; allow the internal temperature of the thickest part of the chicken to reach 74°C .

Since the mixture contains sea salt, taste the dish before adding extra salt.
