Raw Meatball Spice

Çiğ köfte is a deeply rooted culinary tradition in Southeastern Anatolia, with a spice blend that varies from city to city, and even from house to house. Mama Ram's Çiğ Köfte Spice Mix doesn't claim to be the one and only unchanging recipe for this tradition; it offers an aromatic interpretation that emphasizes hot spices.

Cumin, coriander, and black pepper form the dry, earthy, and slightly pungent base of the blend. Allspice, cinnamon, and cloves add a non-sweet but warm and fragrant depth to this body.

Ginger and galangal add sharper, drier, and slightly resinous tones. Powdered paprika gives the mixture color and a controlled peppery temperature.

Instead of a burning spiciness, expect a warm, layered, and long-lasting aromatic character. Since the mixture does not contain salt, chili flakes, tomato paste, or any souring ingredient, it is not a complete raw meatball mixture that can replace them.

For 250g of fine bulgur suitable for raw meatballs, start with 1 tablespoon . While kneading, you can taste the mixture and increase the amount to 1 1/2–2 tablespoons . Wait a few minutes before adding the spices to allow them to integrate with the bulgur and oil.

For lentil patties, kısır (a bulgur salad), or other bulgur-based appetizers, start with 1–2 teaspoons for four servings ; for vegetable and legume patties, start with 2–3 teaspoons for 500g of mixture .

Since the mixture doesn't contain salt, adjust the salt separately. When preparing raw meatballs, add ingredients like isot pepper, tomato paste, pomegranate molasses, and lemon juice according to your taste and the recipe you are using. Add cloves and galangal gradually to the mixture, as they can become overpowering in high amounts.
