Cajun Seasoning

Mama Ram Cajun Seasoning doesn't claim to be the one and only unchanging recipe of this tradition; it offers an aromatic interpretation that brings together herbs, peppers, and pungent spices.

Garlic and onion form the distinct, appetizing base of the blend. Thyme and oregano give this body a dry, herbaceous, and slightly resinous character.

Chili flakes and pointed peppers provide a vibrant peppery warmth, while black pepper creates a drier, more direct sharpness. Mustard and celery seeds leave slightly bitter, green, and pungent tones in the background of the mix. Cumin, meanwhile, binds all these layers together with a warm, earthy depth.

Its bitterness is pronounced, but its character is not limited to bitterness alone. Expect a salty, garlicky, herbaceous, and sharp profile; this intensifies when cooked, especially on browned surfaces.

Because the mixture does not contain any smoked ingredients, it does not naturally have a smoky or charred flavor. The grilled feel comes from the association the spices have with roasted meats and vegetables.

For rice, legumes, and stews , 1–2 teaspoons are sufficient for four servings ; for yogurt-based or mayonnaise-based sauces, 1/2–1 teaspoon is enough for 200g .

Since the mixture contains sea salt, taste the dish before adding extra salt. Because garlic, onions, and dried herbs can burn over very high heat, do not leave the seasoned ingredients directly over the flame for extended periods. Use medium-high heat on a grill or pan to prevent excessive browning of the surface, or add some of the mixture during the final stages of cooking.
