Biryani Masala

Biryani is a family of dishes from different regions of South Asia with numerous variations depending on the rice, meat, vegetables, and cooking technique. Mama Ram Biryani Masala doesn't claim to be the one and only unchanging recipe; it offers an aromatic interpretation that balances warm and refreshing spices.

Coriander and cumin form the dry, earthy body of the mixture. Turmeric adds a yellow-golden color and a slightly bitter depth to this body.

Cinnamon, cloves, and nutmeg create a warm, intense, and fragrant layer of spices without becoming overly sweet. Cardamom and fennel then soften this intensity with refreshing, slightly anise-like, and floral notes.

The chili peppers provide a distinct yet balanced warmth. The bay leaf also leaves a dry, herbaceous, and slightly woody character in the background of the mixture.

Instead of a burning spiciness, expect a warm, layered, and long-lasting spice aroma. Since there is no salt in the mixture, the salt in the dish will need to be adjusted separately.

Biryani Masala first reveals the warm body of coriander, cumin, and turmeric. Then cinnamon, cloves, and nutmeg become prominent; the finish leaves a refreshing, herbaceous trail of cardamom, fennel, and bay leaf.

For a biryani serving four, start with 2–3 teaspoons of seasoning for approximately 300g of rice and 500g of meat or vegetables . If a more intense spice profile is desired, you can increase the amount to up to 1 tablespoon, tasting as needed.

For rice dishes, use 1–2 teaspoons for 300g of rice ; for meat, chicken, or roasted vegetables, use 2–3 teaspoons for 500g of ingredients .

Once the onions have softened, add the spices to the oil and sauté over low heat for 20–30 seconds ; then add the rice, meat, or liquid. Add the mixture gradually and avoid burning it over high heat, as cloves, nutmeg, and bay leaves can become overpowering in large quantities.

Since there is no salt in the mixture, adjust the salt separately.
