Bai Mu Dan – White Peony

Bai Mu Dan – White Peony is a traditional white tea produced from young tea buds and the first leaves surrounding them, grown in the Fujian region of China. Compared to Silver Needle's elegant structure composed solely of buds, it offers a slightly fuller, fruitier, and more pronounced character.

The first sip reveals delicate aromas reminiscent of white flowers and fresh leaves. Then, nuances of ripe pear, light honey, and dried herbs emerge. It leaves a smooth, naturally sweet, clean, balanced, and refreshing taste in the cup.

The Story of the Name

Caffeine Content

Bai Mu Dan contains caffeine. Because it is produced from buds and young leaves, the caffeine level may vary depending on the harvest, product, and brewing method. Therefore, it should not be definitively classified as low or medium caffeine without laboratory analysis.

How to Drink It?

• Simple: Its floral aroma, subtle fruity nuances, and natural sweetness are most clearly felt.

• Re-infusion: The leaves can be re-infused; in subsequent infusions, the floral character softens while the fruity and herbal nuances become more pronounced.

• As a cold brew: Its natural sweetness, pear-like fruity notes, and refreshing character are perceived more cleanly.

• With food: It pairs well with light cheeses, steamed fish and vegetables, simple rice dishes, almond cookies, pear desserts, and light sponge cakes.

Suggested Preparation Method

For hot brewing, steep 4–6 g of tea in 200 ml of water at approximately 80°C for 3–5 minutes.

For cold brewing, add 20–25 g of tea to 1 liter of water at approximately 24°C, let it steep in the refrigerator for 24 hours, and then strain.
