Let the sweetest scent of autumn enter your kitchen! Here's an easy pumpkin pie recipe you can make with our Pumpkin Spice mix:
Materials
For the tart base:
200g oatmeal biscuits (or classic petit beurre)
80g butter (melted, 5 tablespoons)
1 tablespoon of sugar
For the stuffing:
500 g pumpkin puree (pre-baked or boiled)
120 g brown sugar (about ½ cup)
120 ml cream (1 small can, ½ cup)
2 large eggs
2 tablespoons of flour (20 g)
1 teaspoon of vanillin (or vanilla extract)
2 teaspoons Pumpkin Spice mix (Mama Ram)
A pinch of salt
For the topping (optional):
Whipped cream or mascarpone
For sprinkling cinnamon
How to make
Prepare the base: Crush the biscuits. Add the melted butter and sugar and mix. Press the mixture into a 23cm springform pan. Pre-bake at 180°C for 10 minutes.
Prepare the filling: Puree the cooked pumpkin. Add the sugar, cream, eggs, flour, vanilla, salt, and Pumpkin Spice mixture. Blend until smooth.
Bake the pie: Pour the prepared mixture over the base. Bake in a preheated oven at 175°C (350°F) for approximately 45–50 minutes. (The center may be slightly wobbly, but it will firm up as it cools.)
Cool and serve: After cooling to room temperature, refrigerate for at least 3 hours. Top with whipped cream and serve.
Tip
You can adjust the flavor to your taste by using more or less Pumpkin Spice mix.
You can prepare the pie 2 days in advance and keep it in the refrigerator.
